I spent years in tech. Building fast, scaling faster. Then one day I asked myself a simpler question: what really matters?

So I left tech, went to culinary school, and ran a few hundred test batches in our San Francisco kitchen – trying to make that bowl real, without giving up the convenience. That's OMU.

What kind of beef is it?

Grass-fed American beef short ribs. Generous cuts, braised to perfect tenderness, then sealed in high heat for shelf stability with zero preservatives.

What are alkaline noodles?

Noodles made with Kansui, a mineral alkaline that Japanese and Chinese noodle shops have used for about a thousand years. It's what gives them the chew and the spring. We steam ours, then air-dry them. We never fry them.
